German-Bohemians to America 1880's

Surnames: Grossman, Orsak, Schoppel, Halligury
My family came to America in the 1880's. The two surnames are Grossman and Orsak. My grandma's father was Vincent Orsak, her mother was Rosina Grossman. My grandma always said that the Orsak family was Bohemian and the Grossman family was German. My grandma was born in Texas, her mother and father both came to Texas with their families as young adults. My grandma learned Bohemian first, then German and finally she learned English in School. As I have been researching the family history, I have seen the immigration and census records for these two families. The Orsak family immigrated from Moravia, Austria, on the census my great-grandfather states he was born in Bohemia. On the Grossman records it states they are from Moravia, Austria. Since the Grossman's were German and they were from Moravia does this mean they were German-Bohemian's??? My great-grandmother Grossman's parents were Mathias Grossman and Annie Schoppel. Both were from Moravia but spoke German according to my grandmother. I also don't understand why my grandmother says the Orsak's were Bohemian when the records say they were from Moravia. I believe the town they are from is called Novy Hrozenkov, if I am spelling it correctly. If anyone knows anything, please let me know! Thanks!
